DVD to Matroska?

I am going to be doing some traveling soon and I would like to rip some anime dvds to laptop using the Matroska codec. I have tried the method where you rip the VOB/INFO file off the dvd and convert them to mkv but I can’t seem to get it to work. What is the easiest way to do this?
